👩🍳 Instructions
-
1
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
-
2
In a large bowl, combine the sugar cookie mix, softened butter, and egg. Beat with an electric mixer on medium speed or a sturdy spoon until a soft dough forms.
-
3
In a small, shallow bowl, whisk together the 1/4 cup granulated sugar and 1 tablespoon of ground cinnamon.
-
4
Scoop the dough into 1-inch balls. Roll each dough ball generously in the cinnamon-sugar mixture until fully coated.
-
5
Place the coated dough balls about 2 inches apart on your prepared baking sheet. Bake for 8-10 minutes, or until the edges are just set and lightly golden, but the centers still look soft.
-
6
Immediately upon removing from the oven, gently roll each warm cookie again in the remaining cinnamon-sugar mixture. Transfer to a wire rack to cool completely.
💡 Notes
Ensure butter is properly softened but not melted. Overbaking will lead to dry cookies, so pull them from the oven when they still look slightly underdone. Store cookies in an airtight container at room temperature for up to 4 days.
