👩🍳 Instructions
-
1
In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano, cayenne pepper, ground cumin, salt, and black pepper. Mix well to create the blackening seasoning.
-
2
Pat salmon fillets very dry with paper towels. Brush the melted butter evenly over both sides of each fillet.
-
3
Generously sprinkle the blackening seasoning over both sides of the buttered salmon, pressing gently to adhere. Zest half of the lime directly over the seasoned salmon.
-
4
Heat a heavy-bottomed skillet (preferably cast iron) over medium-high heat until very hot. Add the olive oil and let it shimmer.
-
5
Carefully place the seasoned salmon fillets, skin-side down (if using), into the hot skillet. Cook for 3-5 minutes without moving, until a deep, dark crust forms and the edges look charred.
-
6
Flip the salmon fillets and cook for another 3-5 minutes, depending on thickness and desired doneness. For very thick fillets, you can transfer the skillet to a preheated 400°F (200°C) oven for a few minutes to finish cooking through after flipping.
-
7
Remove salmon from the pan. Squeeze the juice from the remaining half lime over the cooked fillets and garnish with fresh chopped cilantro before serving immediately.
💡 Notes
Ensure salmon is patted very dry for the best crust. Adjust cayenne pepper to your heat preference. Serve with a fresh mango salsa or cilantro lime rice for a complete meal. Leftovers store well in the fridge for 2-3 days and are best reheated gently in a low oven.
