1
Prepare the carrots: Wash and peel the carrots. Using the large holes of a box grater or a food processor with a grating attachment, finely grate all the carrots. Place them in a medium-sized mixing bowl.
-
2
Make the dressing: In a small bowl, whisk together the Dijon mustard, honey, fresh lemon juice, and minced garlic until well combined. Slowly drizzle in the extra virgin olive oil while continuously whisking until the dressing is emulsified and smooth. Season with salt and freshly ground black pepper to taste. Adjust seasoning if needed.
-
3
Combine and chill: Pour the prepared dressing over the grated carrots. Add the finely chopped fresh parsley. Using tongs or your hands, gently toss everything together until the carrots are evenly coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the carrots to slightly soften.
-
4
Serve: Give the salad another quick toss before serving. Serve chilled or at room temperature. Garnish with a little extra fresh parsley if desired.
💡 Notes
For best results, use fresh, vibrant carrots. The salad can be made up to 24 hours in advance; beyond that, the carrots may lose some crispness. Feel free to add a pinch of red pepper flakes for a touch of heat, or a teaspoon of fresh tarragon for an aromatic twist. Toasted nuts like walnuts or pecans can also add a nice crunch.
