π©βπ³ Instructions
-
1
Preheat oven to 350Β°F (175Β°C). Line two standard 12-cup muffin tins with paper liners.
-
2
In a large bowl, whisk together the melted butter and granulated sugar until smooth. Add eggs one at a time, whisking well after each, then stir in vanilla extract.
-
3
In a separate medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
-
4
Spoon about 1 tablespoon of brownie batter into the bottom of each prepared muffin liner.
-
5
Gently press one of each type of Girl Scout cookie into the center of the batter in each cup, distributing evenly.
-
6
Spoon another tablespoon of brownie batter over each cookie, ensuring it is fully covered.
-
7
Bake for 18-22 minutes, or until a toothpick inserted into the brownie (not the cookie) comes out with moist crumbs. Avoid overbaking.
-
8
Let cool in the muffin tins for 10 minutes, then transfer to a wire rack to cool completely. Sprinkle with corresponding chopped cookies for topping.
π‘ Notes
Store leftover brownie cups in an airtight container at room temperature for up to 4 days, or freeze for longer storage. For different cookie varieties, simply swap in your favorites! A light spray of cooking oil in the paper liners can help prevent sticking.
