👩🍳 Instructions
-
1
Wash and hull the strawberries, then slice larger berries into halves or quarters for even cooking.
-
2
In a medium saucepan, combine the prepared strawberries, granulated sugar, lemon juice, and water. Stir gently to coat the berries.
-
3
Place the saucepan over medium-low heat. Bring the mixture to a gentle simmer, stirring occasionally, until the sugar dissolves and the strawberries begin to release their juices. This will take about 5-7 minutes.
-
4
Continue to simmer the compote for 15-20 minutes, stirring occasionally, until the strawberries have softened and broken down, and the sauce has thickened to your desired consistency. You can gently mash some of the berries with a spoon if you prefer a smoother compote. Remember it will thicken more as it cools.
-
5
Remove the saucepan from the heat and stir in the vanilla extract.
-
6
Allow the strawberry compote to cool completely in the saucepan before transferring it to an airtight container. Store in the refrigerator for up to 7-10 days.
💡 Notes
For a chunkier compote, mash fewer berries. For a smoother sauce, mash more. Adjust sugar based on the sweetness of your strawberries. Works beautifully with frozen berries too – just add them directly to the pan and extend cooking time slightly.
