👩🍳 Instructions
-
1
Prepare the Raspberry Sauce: In a small saucepan, combine 2 cups raspberries, 1/4 cup sugar, and lemon juice. Cook over medium heat for 8-10 minutes, stirring occasionally, until berries break down and sauce thickens. Let cool completely.
-
2
Prepare the Raspberry Soak: In a shallow dish, combine 1/2 cup water, 1/4 cup sugar, and raspberry liqueur (if using). Stir until sugar dissolves.
-
3
Make the Mascarpone Cream: In a large bowl, beat softened mascarpone cheese, 1/2 cup sugar, and vanilla extract until smooth. In a separate cold bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into mascarpone mixture in two additions until just combined.
-
4
Assemble the Tiramisu: Quickly dip each ladyfinger into the raspberry soak (1-2 seconds per side) and arrange a single layer in an 8x8 inch dish. Spread half of the mascarpone cream over the ladyfingers. Drizzle half of the cooled raspberry sauce over the cream.
-
5
Repeat Layers: Add another layer of soaked ladyfingers, the remaining mascarpone cream, and the remaining raspberry sauce. Cover tightly with plastic wrap.
-
6
Chill and Garnish: Refrigerate for at least 4-6 hours, or preferably overnight, to allow flavors to meld and set. Before serving, garnish with fresh raspberries and fresh mint leaves. Slice and serve cold.
💡 Notes
For a smoother sauce, strain it through a fine-mesh sieve to remove seeds. If omitting raspberry liqueur, use an additional 1/4 cup water or raspberry juice in the soak. Do not over-soak ladyfingers; they absorb liquid quickly. Best made a day ahead.
