👩🍳 Instructions
-
1
To make the Tangzhong: In a small saucepan, whisk together 3 tablespoons flour and 1/2 cup milk until smooth. Cook over medium-low heat, stirring constantly, until thickened to a paste (149°F / 65°C). Transfer to a bowl, cover surface with plastic wrap, and cool to room temperature.
-
2
Activate the Yeast: In a stand mixer bowl, combine 1 cup warm milk, granulated sugar, and yeast. Stir gently and let sit 5-10 minutes until foamy.
-
3
Mix the Dough: Add cooled tangzhong, room temperature egg, 3 1/4 cups all-purpose flour, and salt to the yeast mixture. Mix on low speed for 2-3 minutes until shaggy. Increase to medium-low and knead for 5-7 minutes until the dough comes together.
-
4
Incorporate Butter: With the mixer running, add softened butter one piece at a time, allowing each to incorporate. Increase speed to medium and knead for 8-10 minutes until smooth, elastic, and passes the windowpane test.
-
5
First Rise: Lightly grease a large bowl. Transfer dough, turning to coat. Cover and let rise in a warm, draft-free spot for 1-1.5 hours, or until doubled in size.
-
6
Prepare Filling: While dough rises, combine pizza sauce, mozzarella, diced pepperoni, 1/4 cup Parmesan, dried oregano, and garlic powder in a bowl. Mix well.
-
7
Shape Rolls: Gently punch down dough. Turn onto a lightly floured surface and divide into 12 equal pieces. Roll each into a ball, then flatten into a 4-5 inch circle. Place 1-2 tablespoons of filling in the center. Bring dough edges up and over, pinching securely to seal.
-
8
Second Rise: Lightly grease a 9x13 inch baking dish. Arrange rolls seam-side down, leaving space. Cover loosely and let rise for 30-45 minutes until puffy.
-
9
Bake: Preheat oven to 375°F (190°C). Whisk 1 egg and 1 tablespoon milk for egg wash. Gently brush tops of risen rolls. Sprinkle with 2 tablespoons Parmesan and Italian seasoning. Bake for 25-30 minutes, or until golden brown and bubbly. (Tent with foil if browning too fast).
-
10
Serve: Let cool in the dish for 5-10 minutes before serving warm. Enjoy!
💡 Notes
Ensure yeast is active for best results. Dough can be refrigerated after the first rise for up to 24 hours. Leftovers store well in an airtight container at room temperature for 2 days or refrigerated for 4 days. Can be frozen after cooling completely. Serve with extra pizza sauce or garlic butter for dipping.
