👩🍳 Instructions
-
1
For the Shortbread Crust: In a large bowl, whisk together flour, powdered sugar, and salt. Add cold, cubed butter and cut into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
-
2
Add egg yolk and 1 tablespoon of ice water. Mix until dough just starts to come together. If too dry, add remaining ice water, 1 teaspoon at a time. Shape into a disc, wrap, and chill for at least 30 minutes.
-
3
On a lightly floured surface, roll out chilled dough into a 12-inch circle. Transfer to a 9-inch tart pan with a removable bottom. Press dough into bottom and up sides, trimming excess. Prick bottom with a fork.
-
4
Chill crust for another 15 minutes. Preheat oven to 375°F (190°C). Line crust with parchment paper, fill with pie weights. Bake for 15 minutes, then remove weights and parchment. Bake for 8-10 minutes more until golden. Cool completely.
-
5
For the Dark Chocolate Ganache: Place chopped dark chocolate, softened butter, optional granulated sugar, and a pinch of salt in a medium heatproof bowl.
-
6
Heat heavy cream in a small saucepan over medium heat until it just simmers around the edges. Remove from heat.
-
7
Pour hot cream over chocolate mixture. Let sit for 5 minutes, then whisk gently from the center until smooth, glossy, and emulsified. Pour into cooled tart crust and spread evenly. Chill for at least 1 hour until firm.
-
8
For the Passion Fruit Curd: In a medium saucepan, whisk together strained passion fruit pulp, granulated sugar, egg yolks, lemon juice, and a pinch of salt.
-
9
Cook over medium-low heat, stirring constantly, until mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Do not boil. Remove from heat.
-
10
Add cold, cubed butter, a few cubes at a time, whisking constantly until fully melted and incorporated. Strain curd through a fine-mesh sieve into a clean bowl. Cover surface directly with plastic wrap. Cool completely to room temperature, then chill for at least 2 hours until set.
-
11
Assembly: Once ganache is firm and curd is chilled, gently pour and spread passion fruit curd over the chocolate ganache layer in the tart shell.
-
12
Refrigerate assembled tart for at least 30 minutes before serving. Garnish with fresh passion fruit seeds or chocolate shavings if desired. Serve chilled.
💡 Notes
Ensure all ingredients for the crust are very cold for best results. Use high-quality dark chocolate for the ganache – it makes a significant difference. If fresh passion fruit is unavailable, unsweetened frozen pulp is a great substitute. Store leftover tart in an airtight container in the refrigerator for up to 3-4 days.
