1
In a large bowl, cream together the softened butter and powdered sugar until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl as needed.
-
2
Gradually add the all-purpose flour and a pinch of salt to the butter mixture, mixing on low speed until just combined and a dough forms. Fold in the finely chopped pistachios until evenly distributed.
-
3
Gather the dough and shape it into a log, approximately 1.5 inches in diameter. Wrap tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
-
4
Preheat oven to 325Β°F (160Β°C). Line a baking sheet with parchment paper. Unwrap the chilled dough log and slice into ΒΌ-inch thick rounds. Place cookies 1 inch apart on the prepared baking sheet.
-
5
Bake for 18-22 minutes, or until the edges are lightly golden. The centers should still look pale. Transfer cookies to a wire rack to cool completely.
-
6
Once cookies are entirely cool, melt the dark chocolate using a double boiler method or in the microwave in 30-second intervals, stirring until smooth and glossy.
-
7
Dip one half of each cooled shortbread cookie into the melted chocolate. Gently tap off any excess chocolate. Immediately sprinkle with the coarsely chopped pistachios.
-
8
Place the dipped cookies on parchment paper or a wire rack set over parchment paper to allow the chocolate to set completely, about 30-60 minutes at room temperature, or briefly in the refrigerator.
π‘ Notes
Ensure butter is properly softened for best dough consistency. For a flavor twist, add a tiny pinch of almond extract to the dough. Store cooled, set cookies in an airtight container at room temperature for up to 1 week.
